Tofu stir fry

8 oz. Extra firm Tofu (cubed)

.5 oil

1 onion chopped

1 green squash (julian)

1 yellow squash (julian)

1 carrot (julian)

1 Box mushrooms (sliced)

sprinkle of ginger,soy sauce, a drop of crushed pepper (check on the soy sauce or tamara sauce if allowed)

Sauteed tofu in oil untill slightly browned. Remove from pan.

add wedges to pan continue to stir fry for a few minutes keeping wedges crisp (weigh allowed amount) combine allowed amount of tofu to wedges and stir for 2 more minutes add spices. enjoy
