Abstinent Kugel-Just Veg

1 Kabuki Squash
1 Butternut Squash
One large Bag frozen broccoli and cauliflower
2 Large onions, cut small
2 red peppers cut small

Bake the 2 squashes and the broccoli and cauliflower in the oven at 375 for about and hour and a half until they are soft.  While they are baking saute the onions and peppers in spray oil on a slow flame. 
Puree half the onion and pepper mix with the 2 squash insides and spread in a large baking pan.  Puree the rest of the veg with the broccoli and cauliflower and spread on top. Bake for an hour at 350. 

This freezes really well.

Abstinent Sucatash

Mix together is a sprayed baking pan:
Frozen Corn
Grated Carrot
Diced onion
Diced Red Pepper
Diced Celery

Sprinkle with Salt, Pepper, Garlic Powder and Bake for an hour at 350 degrees.

Chestnut "Stuffing"

Saute together: chopped onions, celery, mushroom and butternut squash till soft, add chestnuts and frozen corn.  Cook for a long time.  It takes on a texture of bread stuffing and is very satisfying. Add salt, pepper, sage and garlic to taste.

VEGETABLE KUGEL

Here's a recipe that i love. i eat this on friday afternoon when everyone else is eating potato kugel.

Boil or defrost a 16oz. bag og frozen vegetables. I like california mix the best. Drain well. Add a little salt. Sprinkle generously with onion powder. Add 1 tspn. oil and 1 egg. Mix well. Bake for 30 to 45 minutes or until the top is golden and the sides move away from the pan.

Super Easy Eggroll Stuffing

one bag white cabbage
one bag red cabbage
one bag shredded carrots
one large can mushrooms
two cans shredded  bamboo shoots
onion
red and green peepers

Spray a large pan with pam.  Mix the vegetables together with garlic powder, onion powder, salt and pepper.  Bake for one hour at 350.

This is great plain but can also be mixed with a grain and or a protein.

Lo Mein

In a frying pan saute together:

four ounces of brown rice spaghetti

8 ounces of Chinese vegetables (see http://tiforoafood.blogspot.com/2010/12/baked-chinese-veggies.html )

4 ounces of protein, meat, chicken or tofu

Soy Sauce

Ginger

Garlic Powder

3 Tbsp water.

Tofu stir fry


8 oz. Extra firm Tofu (cubed)

.5 oil

1 onion chopped

1 green squash (julian)

1 yellow squash (julian)

1 carrot (julian)

1 Box mushrooms (sliced)

sprinkle of ginger,soy sauce, a drop of crushed pepper (check on the soy sauce or tamara sauce if allowed)



Sauteed tofu in oil untill slightly browned. Remove from pan.

add wedges to pan continue to stir fry for a few minutes keeping wedges crisp (weigh allowed amount) combine allowed amount of tofu to wedges and stir for 2 more minutes add spices. enjoy

CAULIFLOWER SALAD

1 Lbs. Cauliflower


1 Small purple onion

1 Large pickle diced

1 oz. Mayonaise

1 Large Carrots scredded

salt & pepper to taste





Instruction



Boil water , then add frozen cauliflower, cover pot and close flame after 1 minute (so cauliflower stays firm)

Allow cauliflower to cool in water/ drain well add all other ingredients. enjoy!

Italian Eggplant "Bread"

I got this recipe on a vacation in Italy 30 years ago, it is an interesting way to cook eggplant and it comes out with a texture like bread.

Slice eggplant very thin.  Heat a pan till it is evenly hot through. Sprinkle with coarse salt.  It has to be coarse because it does not get absorbed by the eggplant, it just keeps it from sticking to the pan.  "Fry" the slices in the salted pan, turn frequently to keep from burning.  When done the eggplant will be dried out and white with brown fry marks.

The original recipe calls for pouring oil over it and marinating it, if you want you can pour your oil portion on it, but I don't think that it is worth it.  I do make an attractive plate of this for my family and pour olive oil and parsley on it.

Baked Chinese Veggies

Spray a pan with Pam:

chop and mix:
    Scallions
    Green and Red Pepper
    Mushrooms (fresh or canned)
    Bamboo Shoots (fresh or canned)
   any other Chinese vegetables that you like
   chopped fresh ginger and garlic

Sprinkle with salt, pepper, garlic powder, onion powder.

Bake in the oven for one hour at 350 degrees, stirring to prevent sticking. You can bake it at a lower temperature for longer if you are not going to to be home.

"Grilled Veggies"


If you want to get the most from your eight ounces of cooked vegetables, don't boil them, it causes them to absorb water, bake them, it dries them out. (Hat tip to my sponsor)


Spray a pan and place mixed sliced veggies in. I like to use mushrooms, eggplant, onion, and peppers. Bake at 350 for a long time. Season with salt pepper, garlic salt, paprika. Yum!
