Bean Soup/Stew

I have always made my soup with a grain, but I wanted to have soup for lunch and I don't get a grain at lunch.  I decided to take my all purpose soup vegetables(see below) and add my 6 ounces of beans and cook it without a grain.  Surprise- it was delicious, it did not need the grain.

All purpose soup mix

Saute together:
Red and White Onion
Red and Green Peppers
Shredded Carrots
Chunked Butternut Squash
Crushed Tomato
any other vegetables that you like

Weigh it into 8 ounce portions and stock your freezer.

To make a soup you can add your whole grain, barley or brown rice and spices, Hawaj, Chili, Salt, Pepper, Garlic, or whatever you want.  I usually add an equal quanity of water.  I often put it in a crock pot before leaving for work.   If you add your protein you can add extra water.  You can also add beans for your protein for a wonderful thick soup .

This is a very useful thing to have around.

"Grilled Veggies"


If you want to get the most from your eight ounces of cooked vegetables, don't boil them, it causes them to absorb water, bake them, it dries them out. (Hat tip to my sponsor)


Spray a pan and place mixed sliced veggies in. I like to use mushrooms, eggplant, onion, and peppers. Bake at 350 for a long time. Season with salt pepper, garlic salt, paprika. Yum!

Microwave Eggs

Lately, instead of taking cooked eggs to work, I take them raw and microwave them at the office. 
Spray a microwave container with pam, sprinkle with spices crack eggs into the container and take with you.  I have a cooler bag with ice that I keep it in.   At work I cook it in the microwave for 1 minute and 10 seconds. It is a lot better then eating cold eggs.

Note: egg yolks can pop while cooking, cover or prepop it.

Tomato Cauliflower Soup


I came home tonight after working 11 hours straight, and I had no time to cook. I pulled out of the freezer:

4 ounces cooked tomatoes

4 ounces cooked barley

4 ounces cooked cauliflower




put them in a pot with a lot of water and spices (curry, garlic, onion powder, salt pepper, and chili) 5 minutes later it was a yummy soup!

Squash Tomato Soup


Cook onions, carrots and squash in a pan till soft. Weigh out 4 ounces and put it in a small crock pot with 4 ounces of cooked tomatoes and 4 ounces of cooked barley. Add a cup of water. Cook on low all day. Season with salt, pepper, garlic, curry or chili powder to taste.


You can also add your 4 ounces of meat and one more cup of water.

Mushroom Barley Soup



Bake in a roasting pan:
Lots of mushrooms and onions for about an hour at 350.

Measure out 8 ounces and put it in a small crock pot with 4 ounces of cooked barley and a cup of water before you leave for work and you will come home to a pot of yummy soup. Season with salt, pepper, and garlic powder.

If you want a bigger pot of soup, you can put in your 4 ounces of cooked meat and another cup of water. It is very satisfying, but you don't get your separate protein.
