If you want to get the most from your eight ounces of cooked vegetables, don't boil them, it causes them to absorb water, bake them, it dries them out. (Hat tip to my sponsor)
Spray a pan and place mixed sliced veggies in. I like to use mushrooms, eggplant, onion, and peppers. Bake at 350 for a long time. Season with salt pepper, garlic salt, paprika. Yum!
