Super Easy Eggroll Stuffing

one bag white cabbage
one bag red cabbage
one bag shredded carrots
one large can mushrooms
two cans shredded  bamboo shoots
onion
red and green peepers

Spray a large pan with pam.  Mix the vegetables together with garlic powder, onion powder, salt and pepper.  Bake for one hour at 350.

This is great plain but can also be mixed with a grain and or a protein.

Abstinent "Peach Cobbler"

In 3 minutes you can make a fantastic dish.

Spray a pan with Pam:
Place in Layers:
2 bags frozen peaches
1 bag of frozen strawberries
1 bag of frozen cherries or blueberries
Put cinnamon between the layers and bake until it is well done (about an hour at 350).

Mustard Dill Salmon

Preheat the oven to 425.  Mix together mustard, dill and garlic.
Slice salmon fillet very thin. Spray a pan with Pam, spread the thin slices of salmon on the pan. Spread the sauce  on the fish and let it sit for 15 minutes.  Bake the salmon for 10 to 15 minutes depending on how thin you slice the salmon.

Layered Eggplant and Meat

Cook thin slices of eggplant, (see eggplant bread) or bake it.  Weigh out 8 ounces of eggplant slices and cooked tomatoes. Layer it together with cooked chopped meat and bake. Serve it over your whole grain.

Crustless Fruit Tart

Spray a baking pan with Pam.  Layer it with thin slices of peeled apples, pears, strawberries and cherries.  Between the layers sprinkle with cinnamon. Bake at 325 for 2 1/2 hours or until it is very well done and almost seems carmelized-it will taste better when it is crispy in places. 

My family loved this- even the ones not on program.  It comes out amazingly sweet.

Black Bean Soup

8 ounces of baked soup vegatables (see below)
3 ounces of black beans
2 ounces cooked ground turkey
4 ounces barley

spices to taste- salt, pepper, cumin, celery salt, onion powder, garlic powder, chili powder, lots of paprika

Place everything into a crock pot and cook all day on high. Yum!

Lo Mein

In a frying pan saute together:

four ounces of brown rice spaghetti

8 ounces of Chinese vegetables (see http://tiforoafood.blogspot.com/2010/12/baked-chinese-veggies.html )

4 ounces of protein, meat, chicken or tofu

Soy Sauce

Ginger

Garlic Powder

3 Tbsp water.

Fantastic Tea Essence


Place an entire box of herb tea and 4-6 Cinnamon sticks into a large glass jar. Let it sit overnight. Serve diluted with hot or cold water and lemon or lime juice. It tastes so much better then tea that brews for a short time and the Cinnamon stick adds a lot of natural sweetness.

Pear Apple Sorbet

Cut up several apples and pears (with the peel on if you want).  Optional- add frozen cherries and/or strawberries.  Cook together with some cinnamon for a long time over a slow flame till it is reduced in size.  Proccess with an immersion blender, weigh into portion cups and freeze.

Take out of the freezer about a half an hour before you want to eat it or you will not be able to get your spoon into it.

Tofu stir fry


8 oz. Extra firm Tofu (cubed)

.5 oil

1 onion chopped

1 green squash (julian)

1 yellow squash (julian)

1 carrot (julian)

1 Box mushrooms (sliced)

sprinkle of ginger,soy sauce, a drop of crushed pepper (check on the soy sauce or tamara sauce if allowed)



Sauteed tofu in oil untill slightly browned. Remove from pan.

add wedges to pan continue to stir fry for a few minutes keeping wedges crisp (weigh allowed amount) combine allowed amount of tofu to wedges and stir for 2 more minutes add spices. enjoy

CAULIFLOWER SALAD

1 Lbs. Cauliflower


1 Small purple onion

1 Large pickle diced

1 oz. Mayonaise

1 Large Carrots scredded

salt & pepper to taste





Instruction



Boil water , then add frozen cauliflower, cover pot and close flame after 1 minute (so cauliflower stays firm)

Allow cauliflower to cool in water/ drain well add all other ingredients. enjoy!

Roasted Chickpeas

Spray a pan with pam and put a single layer of cooked chickpeas. Sprinkle with salt, pepper, onion powder, garlic salt, paprika, chili powder, and any other spice you are in the mood for. Bake at 425 for 25 minutes or 350 for 35 minutes. Some people like them really crispy and some people like them just a bit done. Either way they are spicy and delicious.

Grilled salmon


1.Place salmon in a pan

2. Spray with Pam and sprinkle with salt and pepper

3. Broil for 10 minutes

4. drizzle with Tamari sauce (wheat free, sugar free soy sauce) and broil for another 2-3 minutes.

Garlic za'tar chicken and sweet potatoes:

1. Clean chickens and place in a pan surrounded by cubed sweet potatoes and garlic cloves still in their skin.

2. drizzle with balsamic vinegar

3. spray sweet potatoes with Pam

4. sprinkle chicken and potatoes with paprika, garlic powder, onion powder and za'tar

Bake uncovered at 350 for 1 1/2 hours (on convection bake, if your oven has that feature). Half way through cooking, toss potatoes in the chicken juice.

Italian Eggplant "Bread"

I got this recipe on a vacation in Italy 30 years ago, it is an interesting way to cook eggplant and it comes out with a texture like bread.

Slice eggplant very thin.  Heat a pan till it is evenly hot through. Sprinkle with coarse salt.  It has to be coarse because it does not get absorbed by the eggplant, it just keeps it from sticking to the pan.  "Fry" the slices in the salted pan, turn frequently to keep from burning.  When done the eggplant will be dried out and white with brown fry marks.

The original recipe calls for pouring oil over it and marinating it, if you want you can pour your oil portion on it, but I don't think that it is worth it.  I do make an attractive plate of this for my family and pour olive oil and parsley on it.

OA "Latkes"

Mix together your oatmeal (one or two ounces) with your eggs and salt, pepper, onion powder, garlice powder and parsley.  Let sit for ten minutes.

Preheat frying pan, spray with Pam and fry into pancakes.

Abstinent Cheesecake - this replaces a breakfast meal

Ingredients:



"Crust"

1 oz. of oats (1 1/2 oz. if that is your measurement)

cinnamon



Filling

1 egg

2 oz. cottage cheese

2 oz raisins or 6 oz cortlandt apple diced

or 1 oz raisins and 3 oz cortlandt apple diced

cinnamon - to taste (important)

(you can vary the fruit - drained pineapple is also good, as well as fresh cherries)



I use the smallest square aluminum foil baking dishes available (I think 4 X 4)



1) Toast oats/cinnamon in oven for about five minutes.

2) Spread half this mixture on botton of pan.

3) Mix the filling and spread over oats.

4) Top with remainder of oats.



Bake at 350 for about 35-45 minutes. Check for doneness.





I usually make six of these at the same time and freeze. First I measure out 6 oz. of oatmeal and toast, and then spread the 1/2 for botton crust in each of the six pans.

Then I do filling for each one separately in a bowl, using the same bowl consecutively and put that in each pan. Finally, I top each one with 1/2 oz of oats.



It is a little time consuming, but I do it occasionally for Shavuous or when I want to have a quick breakfast ready to pull from the freezer. Especially good for traveling.

Baked Chinese Veggies

Spray a pan with Pam:

chop and mix:
    Scallions
    Green and Red Pepper
    Mushrooms (fresh or canned)
    Bamboo Shoots (fresh or canned)
   any other Chinese vegetables that you like
   chopped fresh ginger and garlic

Sprinkle with salt, pepper, garlic powder, onion powder.

Bake in the oven for one hour at 350 degrees, stirring to prevent sticking. You can bake it at a lower temperature for longer if you are not going to to be home.
