Bean Soup/Stew

I have always made my soup with a grain, but I wanted to have soup for lunch and I don't get a grain at lunch.  I decided to take my all purpose soup vegetables(see below) and add my 6 ounces of beans and cook it without a grain.  Surprise- it was delicious, it did not need the grain.

All purpose soup mix

Saute together:
Red and White Onion
Red and Green Peppers
Shredded Carrots
Chunked Butternut Squash
Crushed Tomato
any other vegetables that you like

Weigh it into 8 ounce portions and stock your freezer.

To make a soup you can add your whole grain, barley or brown rice and spices, Hawaj, Chili, Salt, Pepper, Garlic, or whatever you want.  I usually add an equal quanity of water.  I often put it in a crock pot before leaving for work.   If you add your protein you can add extra water.  You can also add beans for your protein for a wonderful thick soup .

This is a very useful thing to have around.
